Macaroni and cheese meets tacos. In an Instant Pot this is a quick, nutritious, and tasty meal.
This could serve 4. Although Lori and I finished this for main meal. From start to serving this might take 25 minutes.
Ingredients
- Olive oil, 1 TBSP
- Small yellow onion, diced
- Bell pepper, orange, chopped
- Black or Kidney Beans, 15 ounce can, drained and rinsed
- Diced Tomatoes, 15 ounce can
- Taco seasoning, packet for 6 servings
- Elbow pasta, 4 ounces
- Water, 1 cup
- Spinach, fresh, 4 ounces
- Cheddar cheese, 1 cup
- Parmesan cheese, 1/2 cup
Directions
Saute onion and bell pepper in oil until tender, approximately 5 minutes.
Add beans, tomatoes, taco seasoning, pasta, and water to Instant Pot. Pressure cook, high pressure, medium temperature, for 6 minutes. Quick release.
Fold in spinach and cheese until cheese is melted and spinach is wilted.
